Warning: Highly Addictive

Changes:
Before I sauteed the tofu, I soaked them for 5 min in the vinaigrette sauce, so the tofu soaked in some sauce and would be tasty all the way through. I also cut the tofu into smaller pieces and drained/dried it REALLY really well before doing anything else. You can drain it by putting it on a plate, covering w/ syran wrap, and placing something heavy on it for 30 min. I used my sugar canister. After that, pat the tofu dry w/ a paper towel.
I used udon noodles, 'cause that's what I had. They get pre-soaked per pkg instructions. So instead of boiling them per recipe, after the tofu was well browned, I threw the noodles in w/ the tofu, poured the sauce in, and threw in some shredded kale (a new favorite of mine - doesn't get wilty like spinach). Tossed all that around. Put a lid on it, and simmered on low for maybe 15? minutes. Served w/ raw sugar snap peas.

Yummy! I have some left over Kale that I need to use up, so I will give this a try. Um, so those noodles that you had... Where would I find those?
